Bourbon Bacon
Brussels Sprouts

Serves 8–12 Prep: 20 min Cook: 35 min Passed / Appetizer
1 lb Brussels sprouts, trimmed
8 strips thick-cut bacon
3 oz bourbon (not cheap)
2 tbsp dark brown sugar
1 tbsp whole grain mustard
1 tsp smoked paprika
½ tsp cayenne
Bamboo skewers, soaked
Fresh cilantro, torn
Flaky sea salt to finish

"Blanch the sprouts first so they cook through before the bacon burns. The bourbon goes in the glaze — reduce it properly. You want caramelization, not char. Skewer one sprout per pick. These disappear at every event."

Blanch sprouts 4 min, shock in ice water. Wrap each in half a bacon strip, skewer. Mix bourbon, sugar, mustard, and spices into glaze. Roast at 400°F for 20 min, baste every 5. Finish under broiler 2 min. Top with cilantro and sea salt. Serve immediately.

Blackened Salmon
Broccoli Cream Sauce

Cast iron · Classic technique · Southern-global

Serves 4–6 Prep: 15 min Cook: 18 min Plated Dinner
4 salmon fillets, 6 oz each
2 tbsp blackening spice blend
2 cups broccoli florets
1 cup heavy cream
3 cloves garlic, minced
½ cup parmesan, grated
1 cup elbow pasta, cooked
Fresh green beans, blanched
2 tbsp unsalted butter
Lemon, herbs to finish

"The blackening crust needs a screaming hot cast iron — don't move the fish for 4 minutes. The broccoli cream should coat the pasta, not flood it. This dish is about contrast: char against cream, crunch against tender."

Press spice into salmon. Sear in butter on screaming-hot cast iron 4 min skin-side down, flip once. Sauté garlic, add cream, reduce by a third. Add steamed broccoli and parmesan — blend half for texture. Toss pasta. Plate pasta base, top with salmon, spoon sauce. Finish with green beans, lemon zest, herbs.
